Our new House Espresso comes from El Desarrollo, a female-led cooperative in the Huila region of Colombia - one of the country’s most celebrated coffee-growing areas, sitting at 1,700 metres above sea level.

El Desarrollo was founded on a powerful premise: that women, who make up around 70% of the global coffee workforce, deserve equal recognition, opportunity, and reward. The cooperative challenges systemic inequality by providing women producers with education, production support, and direct access to international specialty markets. When you buy this coffee, you’re not just getting an exceptional cup - you’re supporting a movement.

The coffee itself is a washed Caturra and Colombia cultivar blend, scoring 85.5 on the SCA (Specialty Coffee Association) scale. It’s roasted specifically for milk-based espresso, delivering a rich, structured sweetness - milk chocolate and caramel underpinned by a bright blackberry note that cuts beautifully through milk.

Available in whole bean, Aeropress, espresso, filter, and cafetière grinds, in 250g, 1KG, and 2KG formats.

Story

Popayán is located in Colombia’s Cauca department at an elevation of 1,700 metres above sea level. The region, known as the Meseta de Popayán, is naturally protected by the Andes mountain range, creating consistent climate and altitude conditions that contribute to a well-balanced cup profile, often featuring floral and caramel notes.

Cofinet partners with around 65 local growers for this program, fostering long-term relationships built on trust and shared commitment to quality. To encourage high standards, farmers receive premiums of up to 20% above market price based on quality assessments.

Processing

All specialty coffees are hand-picked with great care, ensuring only the ripest cherries are selected. After harvesting, the cherries are floated and sorted to remove any defects before being pulped and fully washed to eliminate the cherry and mucilage. The resulting parchment coffee is then laid out on patios to dry slowly over a period of more than 20 days.
