Story

In the heart of Huila, Colombia’s premier specialty coffee region, the land and its people work in harmony to produce coffee unlike anywhere else in the world. In the highlands of La Plata, diverse microclimates shape rich, layered flavours that tell the story of their origin. Here, 35 family enterprises cultivate their crops with extraordinary care - every stage, from selective harvesting to slow sun drying, is guided by generations of expertise. Quality is rewarded, not assumed; farmers are paid 20% above national prices, ensuring meticulous attention to every detail. Through conscious cultivation, controlled fermentations, and a deep respect for the ecosystem, Crecert Specialty Coffee captures the full expression of Huila - a cup that reflects its altitude, its families, and the spirit of Colombian craftsmanship.

Processing

In Huila, coffee meets sugarcane in a natural decaffeination process that preserves flavour while gently removing caffeine. Using ethyl acetate derived from locally fermented sugarcane molasses, the method begins by softly steaming green coffee to open the beans and release caffeine. The ethyl acetate, combined with pure spring water, is then circulated through the coffee, drawing out caffeine while leaving the delicate aromatic compounds intact. Once extraction is complete, low-pressure steam and careful drying return the beans to their ideal condition, maintaining the perfect humidity to protect their flavour. The result is a coffee that retains its sweetness, body, and sense of origin - proof that decaf, when crafted with Huila’s ingenuity and natural resources, can be every bit as expressive as its caffeinated counterpart.
