This year differs from our last four Christmas Coffees. We've decided to showcase a rather special coffee from the same producer behind this year's best selling coffee, Edinson Argote of Quebraditas in Colombia.

Christmas 2025 is a Washed Cinnamon Co-Ferment, a processing method that involves the intentional addition of cinnamon bark and yeast to create flavour clarity.

Story

Meet the Producer: Edinson Argote

Edinson Argote is one of those rare coffee producers whose story is as inspiring as the cups he creates. Raised by his sister after losing his mother at just three years old, Edinson learned resilience early. By eleven he had already left home to work wherever he could, and by eighteen he was serving in the army, completing 18 months before finding the path that would change his life: specialty coffee.

His first real break came at a coffee buying station in Acevedo, Huila, where he spent long days loading and unloading parchment. It was here that curiosity took hold. Edinson became fascinated by cupping- the craft of tasting coffee - and began training his sensory skills, soon realising that coffee held not just a livelihood, but a calling.

From there, his journey moved into some of Cauca’s most innovative farms, where he learned advanced processing and quality control under experienced mentors. He rose quickly, eventually becoming head of quality and processing - yet the dream of building something of his own never left him.

Today, that dream lives at Quebraditas Coffee Farm, a family-run project where Edinson cultivates rare and expressive varieties including Gesha, Bourbon Sidra, Ombligón, Eugenoids, Chiroso, and Laurina. Every harvest reflects the same values that have shaped his life: family, determination, and an unwavering commitment to exceptional quality.

For our Christmas coffee, we’re incredibly proud to share Edinson’s work with you - a cup shaped by skill, heart, and a story worth savouring.

Processing

The process begins with harvesting, ensuring at least 90% of the cherries are fully ripe, before moving to floating to remove any green, overripe, or dry cherries; the selected cherries then undergo 12 hours of oxidation in food-grade plastic drums prior to being dry-pulped. After pulping, the coffee ferments for 24 hours in an open tank to remove remaining mucilage, followed by a second controlled fermentation lasting 72 hours at temperatures below 25°C with a mix of cinnamon and specific yeast. Once the 72-hour fermentation is complete, the coffee is washed and immediately transferred to mechanical dryers for 42 hours at 38°C, and finally the dried coffee is stabilised in GrainPro-type bags to rest and equalise before export or roasting.
