Daye Drinker spotlights the future of coffee processing. Thermal controlled fermentation provides repeatable results with micro-bacterial activity in mind. Like the patient curation of sourdough or lacto-blueberries, Daye Drinker is a slow, long process that yields an exceptionally deep fruity profile with notes of spice, cranberry and a tart finish.

Coffee is a story.

Story

This coffee is sourced from small plots nestled in the highland region of Arbegona, specifically from a village named Rumudamo, benefiting from elevations reaching up to 2300 MASL. While coffee is the primary cash crop grown here, the area also cultivates a variety of other plants, including sugar cane, false banana, spices, and vegetables.

Arbegona is one of the 30 districts within Ethiopia's Southern Nations, Nationalities, and Peoples' Region. Located in the Sidama Zone, it is bordered by Bona Zuria to the south, Bursa to the southwest, Gorche to the northwest, the Oromia Region to the north, and Bensa to the east. The district’s main town shares the same name: Arbegona.

Processing

The cherries are first sorted by density and quality using large water tanks, where they are floated to separate the ripe ones.

After this flotation process, the ripe cherries are pulped and placed in fermentation tanks for 72 hours.

Once fermented, they are moved to raised drying beds lined with mesh nets, where they dry for 9 to 10 days.
