The Story of Finca Gascón & The Contreras Family

Perched at an astonishing 1,800 to 2,050 meters above sea level in San Juan Gascón, overlooking the historic valley of Antigua Guatemala, Finca Gascón is a boutique estate dedicated to precision agronomy and bioprocessing. Founded in 2012 by Gildardo Contreras after recognizing the exceptional microclimate and volcanic soil of the mountainside, the farm evolved into an experimental hub when his son Felipe stepped in to spearhead advanced fermentation models and on-farm bioprocessing.

Under their experimental "Magnos" program, this lot underwent a specialised Nitro Lactic Natural process. Ripe whole cherries are sealed in anaerobic environments flushed with nitrogen gas to completely displace oxygen, while encouraging lactic acid bacteria to thrive. This selective microbial environment slows cellular respiration and converts malic acidity into softer lactic acids, infusing the bean with silky mouthfeel and tropical fruit esters. Dried whole as a full natural, Gum Drop Buttons perfectly captures Finca Gascón’s mission: using cutting-edge bioprocesses to craft whimsical, competition-level cup profiles.

Story

Perched high above the historic colonial valley of Antigua Guatemala, the story of Finca Gascón began in 2012 when Gildardo Contreras acquired an untouched tract of mountainside in the small town of San Juan Gascón. Where others saw challenging, steep slopes, Gildardo recognized an extraordinary natural asset: mineral-dense volcanic soils, crisp mountain air, and dramatic elevations stretching from 1,800 up to 2,050 meters above sea level - conditions tailor-made for slow cherry maturation and complex sugar development.

Agricultural work began in earnest in 2014 with the planting of traditional Bourbon 300, laying the farm’s foundation on deep sweetness and soil health. Just two years later, in 2016, the estate expanded into world-class competition varieties, planting two hectares of Geisha backed by a state-of-the-art drip-irrigation network.

The inaugural Geisha harvest immediately validated the terroir, scoring an impressive 88.5 points on international cupping tables. A defining turning point arrived in 2019 when Gildardo’s son, Felipe, joined the family operation. Driven by the evolving demands of the global specialty coffee community, Felipe set out to transform Finca Gascón from a traditional boutique farm into a forward-thinking bioprocessing lab. He implemented rigorous controls across temperature, atmospheric pressure, and microbial ecology, eventually launching their experimental Magnos series. To anchor these innovations in long-term environmental sustainability, the Contreras family built an on-site "Biofabric" facility in 2022.

This dedicated laboratory enables them to create organic agricultural inputs from farm byproducts, nurture native soil microbiomes, and conduct precision fermentations under closed, sterile conditions. Today, Finca Gascón bridges multi-generational dedication with modern bio-innovation, proving that cutting-edge science and regenerative agriculture can come together to produce truly unforgettable coffees.

Processing

The journey of Gum Drop Buttons begins with strict selective harvesting across the high-altitude parcels of Finca Gascón, where pickers hand-collect only fully mature, sugar-dense cherries. After an initial flotation rinse to separate low-density fruit, the intact cherries are transferred directly into hermetic, food-grade bioreactor tanks.

To initiate the process, high-purity nitrogen gas is injected into the sealed vessels, completely purging ambient oxygen and pressurizing the chamber. This oxygen-deprived environment halts unwanted oxidation and prevents acetic fermentation from developing, keeping the fruit’s natural profile bright and pristine. Under these controlled conditions, native lactic acid bacteria take the lead in fermentation. As these microbes consume the natural sugars within the intact cherry pulp, they gently convert sharp, crisp malic acids into creamy, rounded lactic acids, a biochemical transformation responsible for the coffee’s hallmark soft mouthfeel, delicate peach notes, and gentle tropical fruit esters.

Once the precise Brix and pH targets are achieved, the tanks are unsealed, and the whole cherries are spread out across raised African beds. The coffee dries slowly in the dry mountain air of Antigua Guatemala, turned diligently by hand throughout the day to ensure uniform moisture loss. After weeks of careful dehydration, the parchment rests in climate-controlled conditions to equilibrate before dry milling, locking in a sweet, velvety cup with remarkable clarity.
