Story

This Gesha lot is cultivated by Theilor Cruz at 1750 m.a.s.l in Tabacona farm, located at 1750 MASL in San Ignacio, nestled in the heart of the mountains.

His farm enjoys the perfect climate and soil for growing specialty coffee. Known for its altitude and rich biodiversity, this region produces coffee with a truly distinctive flavour.

Theilor Cruz is a young coffee farmer. His love for coffee runs deep, inherited from his father and family. As a passionate and dedicated producer, Theilor pours his heart and soul into every coffee lot.

His goal is to showcase the exceptional quality of his coffee and highlight its origin. Together with his family, Theilor cultivates coffee in this pristine environment, where nature's bounty gives rise to a smooth, balanced, and complex cup.

Processing

The cherries are first sorted by density and quality using large water tanks, where they are floated to separate the ripe ones.

After this flotation process, the ripe cherries are pulped and placed in fermentation tanks for 12 hours.

Once fermented, they are washed before being moved to raised drying beds lined with mesh nets, where they dry for 10 to 12 days.
