The coffee behind the subscription is our current House Espresso — sourced from El Desarrollo, a female-led cooperative in the Huila region of Colombia. El Desarrollo was built on the belief that women, who make up around 70% of the global coffee workforce, deserve equal opportunity, education, and access to international markets. It’s a coffee with real purpose behind it.

Grown at 1,700 metres above sea level and scoring 85.5 on the SCA (Specialty Coffee Association) specialty scale, this washed Caturra and Colombia cultivar delivers milk chocolate, blackberry, and caramel in every cup — roasted specifically to shine in milk-based espresso.

Available in 200g (letterbox-friendly), 2× 200g, or 1KG, across whole bean, Aeropress, espresso, filter, and cafetière grinds.

Story

Popayán Reserve is a collection of coffees grown by 65 producers from one of Colombia’s most famous coffee growing regions - Cauca.

Sheltered by the Andes mountain range and located on nutrient rich volcanic soil, the so-called Meseta de Popayán provides the ideal consistent climate for coffee cultivation.

Collaborating through quality driven cooperatives like Popayán allows farmers better access to means of production, supplies and education - facilitating ongoing social & environmental sustainability.

The resulting coffee offers year-round consistency and fresh, quarterly deliveries straight from the farms making for the perfect House espresso.

Processing

All specialty coffees from Popayán are hand picked.

Careful attention is paid to collect only the ripest cherries which are then floated and sorted before being pulped and washed to remove all the cherry and mucilage.

The parchment is then placed on patios to dry over the course of 20+ days to achieve the ideal moisture content of ~14%.
